weekend eats + vegan sweet potato & celeriac soup


1 celeriac, peeled and cubed
1 large sweet potato, peeled and cubed
1/2 a large onion (or 1 medium onion), chopped
1 shallot, sliced
2 garlic cloves, sliced
olive oil
handful of parsley, chopped
4 c veg stock (or chicken stock if not V)

Heat a tablespoon of olive oil in a dutch oven over medium heat. Add celeriac, sweet potato, onion, shallot and garlic. Season with salt and pepper. Cook for a few minutes until the vegetables start to sweat. Add stock. Turn down heat to medium-low, cover and simmer for twenty minutes or until vegetables are soft. Turn off heat. Add parsley and puree with an immersion blender. I finished mine off with a drizzle of chili pepper infused olive oil.

Let's be real - is this a meal I would make for myself were I not on the ED? Probably not. Did it do the job of helping get me through these 21 days? Yes. And when eating a not very exciting meal I find it helps to pair it with an episode of this season's not very exciting bachelor.

It was my first weekend on the ED and I did it! It made me cringe being "that orderer" at restaurants especially when we were out with some of Adam's friends who I don't know that well. But I made it thru.

On Saturday Liana and I went to Red Hook with Casper and had lunch at our old haunt  Hope and Anchor where I learned that diners with extensive menus are much easier to keep ED than tiny, foodie spots where there are only five things on the menu. I had a salmon burger with no cheese and no bun but it came with caper tapenade and red onion, so while the plate looks slightly futuristic it was still very substantial. I also ate some of the sweet potato fries which are ED enough for me.

I hadn't been to eat at Hope and Anchor possibly since Liana and I lived in Red Hook ten years ago (!) but even so when they told us they were closing because they couldn't renew the lease we were both very disappointed.  While I was out I got the following photo from Adam who is not on the ED but might as well be with meals like these. He took the rest of the soup and added leftover roasted cauliflower and parsley which looks slightly more appealing than the version I ate. The cauliflower gives it the texture I was missing.


Saturday night we saw a play that Adam's friends wrote and went to Samurai Papa after where I made a meal of brussel sprouts, tuna avocado salad and sashimi with tamari. All totally fine and good but the ordering process was something I don't hope to relive often.

Sunday we saw The Shape of Water at Bam and went to Baba Cool after. Baba Cool is almost constantly closed for renovations and there is hardly ever anyone in there but I frequent it for breakfast and know they are ED friendly so asked everyone to humor me so I could order something normal.

And then - the weekend of eating out was over and I had made it thru my first full week of the Elimination Diet. Only two more of these to go before we start the intoxicating process of...reintroduction!
