maple cake for a scottish-canadian baby shower


This was from a couple weekends ago, before I was committed to the elimination diet and all my baking experiments started to feature brown rice flour. Not that I would bring a vegan cake to a baby shower anyway. I tried that once with a vegan cheesecake at an Oscar party and it did not go over well.

I used Martha's recipe for the cake but cut the maple syrup in half and took out the walnuts. For a simple icing I mixed 2 8 oz package cream cheese with 2 c powdered sugar and 2 tbsp maple syrup in my stand mixer with the paddle attachment until it was gooey. (I had a ton left over but halving the recipe wasn't enough). I toasted walnuts in a frying pan to sprinkle on top (instead of in the batter).

I was running a little late for the shower, so only trimmed one of the layers and left the other as was which is why the cake (below) is a little lopsided, but was still delicious!
