I love pancakes and so it was only a matter of time until I tried an ED version. Yes, you have to use the blender. But honestly my blender has been getting so much play during the ED that cleaning it doesn't even bother me anymore. And I promise, these were worth it. They are also an item I predict I will make even when regular pancakes are available to me again.
Despite my love for them, I can never finish pancakes in one sitting. But as these required the cleaning of said blender I didn't want to throw the leftover away when I couldn't finish. So instead, rather than gorging myself, I just left them out and took little nibbles as I was working throughout the morning. Gross? Maybe, but I found these to be good even cold - like a little taste of a turmeric muffin. Or, perhaps I just haven't had wheat or dairy in so long I've forgotten what food is supposed to taste like. Either way, I was a big fan!
Not gonna give the whole recipe because I followed this one exactly except that instead of the topping she suggests had them with maple syrup and cashew yogurt. I wanted to try the golden variety first but perhaps on Valentine's Day I'll make the fluffier red ones. Just what Adam wants, I'm sure 😉
