chocolate beet cake

My friend, Caitlin, turned 30 on Saturday. About a month ago I showed her my cake board and said, "pick whatever cake you want and I'll make it for your party." She chose this chocolate beet cake. I was thrilled because it was one that I'd been excited to make. The cake was moist, earthy, very chocolatey and not too sweet. Straight-up creme fraiche with poppy seeds is the easiest icing ever and now I have left-over poppy seeds for my oatmeal. HAPPY BIRTHDAY, CAITLIN!!!
