cinco de mayo dinner

This dinner actually has nothing to do with Cinco de Mayo except for that's when I made it. The Garden recently starting carrying chicken breasts, which usually I would not gravitate towards but bought on a whim this weekend. I knew I wanted to make some sort of chicken and rice dish since we have so much grain backlog in the cupboard from the Quinciple. Most of the Arroz con Pollo recipes I looked at required too many ingredients for Monday night and also recommended using thighs and legs in addition to the breast. This recipe for Chicken with Herb-Roasted Tomatoes jumped out at me because with the exception of a couple of fresh herbs, I already had everything I needed to make it and knew it would pair well with the brown jasmine rice. If you have extra time and can stand to wait for the chicken to finish cooking before adding the shallot and vinegar to the sauce it is also a one pot meal. My one regret is that I did not pick up some greens to go with it.
